LSU AgCenter announces acidified foods workshop

BATON ROUGE, La. – The LSU AgCenter School of Nutrition and Food Sciences will conduct a workshop for acidified foods processors on Jan. 12-13, 2016.

The Acidified Foods School on the LSU campus will provide certification of supervisors of acidification and container-closer evaluation programs for acidified foods, such as apples, oranges and lemons and food dressings and condiments that have a natural pH of 4.6 or below.

The Food and Drug Administration and U.S. Department of Agriculture guidelines require each processor of acidified foods to operate with a certified supervisor on hand at all times during production.

The school is offered in conjunction with the FDA and the Grocery Manufacturers Association Science & Education Foundation. The cost is $500 per person if registration is made by Dec. 11 and $525 after that date. Registration ends Dec. 18. Advance registration is required.
