Experts providing science behind sensory evaluation of seafood

(Radio News 09/13/10) The LSU AgCenter is working with food scientists and seafood safety experts from other universities to help train seafood processors on sensory testing of seafood. LSU AgCenter food scientist Jon Bell says the experts are providing processors with the scientific background of how sensory evaluation of seafood works while letting them test samples of seafood spiked with petroleum.
